Energy salad

January is when we turn our backs on the Holiday Season excesses and try to regain our energy. Here’s a delicious, colourful, flavourful salad to help get things back to normal!

The Surette-brand vinegars are high quality products made in Québec and soon to be available in supermarkets. Higher-end products in general are already available in specialty grocery stores such as Les Conifères in Saint-Adolphe-d’Howard.

SERVING: 2 to 4 | PREPARATION: 25 minutes | COOKING TIME: not applicable

Ingredients

Salad

  • 1 bunch kale, washed and stems removed
  • 2 finely chopped endives
  • 2 pears, not too ripe
  • 1 pomegranate, arils (seeds) only
  • 1 grated carrot
  • ½ cup roasted almonds, coarsely chopped
  • 50 – 80 g of soft goat cheese, crumbled
  • Homemade small croutons to taste

Dressing

  • 1/4 cup Surette apple cider vinegar
  • 2/3 cup extra virgin olive oil
  • 1 large Tablespoon (15 ml) strong mustard
  • 1 large Tablespoon liquid sweet honey
  • 1 French shallot, finely chopped
  • Salt and pepper

Instructions

  1. Mix all the salad ingredients in a large salad bowl
  2. Mix the dressing ingredients in a separate container
  3. When ready to serve, add dressing to salad and mix well.

Serve immediately!
